Overall, it is clear that the process consists of five stages, beginning with mixing water and milk and ending with the final product of soft cheese.
First, water and milk are mixed and the resulting mixture is cooled at 50C for 2 hours. Salt is then added to the mixture in preparation for the next stage of fermentation. This fermentation stage involves heating the water and milk mixture for another 2 hours, this time at the higher temperature of 350C.
The next stage is evaporation when, during the process of heating at 1000C for 8 hours, the mixture becomes thicker and steam is given off. Cooling is the final stage after evaporation. Waste water is drained from the mixture, which then cools and thickens even more for a period of 16 hours at 50C. After filtering, soft cheese is produced.
